Spicy Tandoori Chicken

It's a summer time, time for splishing splashing and eating some hot grilled or barbequed food and how about a cold and chilled healthy drink. If you have a pool and a outdoor grill you are all set to beat the heat with this wonderful dish. Very easy to make.

Vic Firth Gourmet Spice Dispenser Tandoori chicken is a popular Indian and Pakistani dish consisting of roasted chicken prepared with yogurt and spices and marinated overnight or for atleast 6-8 hrs.Tandoori cooking is traditionally done using a tandoor, a barrel-shaped clay oven. But you'll get great results with a very hot conventional oven.

The trick to have a moist, juicy and tasty tandoori chicken is to get the chicken with a bone and skin on. The skin on chicken helps to keep the meat moist, juicy. You can always remove the skin, when the chicken is done. If you don't want to go through all the efforts of marinating all these spices, I would recommend getting a store bought ready Tandoori paste. Easy and fulfilling. Spices are available on Amazon or any Indian supermarkets.

2 chicken leg Quarters
2 tblsp fresh lime juice
1 1/2 tblsp plain yogurt
Salt to taste
1/2 tsp turmeric powder
1/4 tsp coriander powder
1/4 tsp cumin powder
1/2 tsp ginger paste
1/2 tsp garlic paste
1/4 teaspoon ground red pepper/chilli/paprika
1/2 tsp garam masala
1/2 tsp curry powder
1/4 tsp Chaat Masala
1 tablespoons vegetable oil/Olive oil

Spicy Tandoori Chicken

Preparation: Make few slits on the top of the Chicken leg quarters. Marinate the chicken in all the above spice along with the vegetable oil.Place it in a plastic tupperware or a plastic ziplock bag and marinate the chicken overnite or atleast for 6-8 hrs. In a pre heated Conventional oven for 500 degrees, broil the chicken. One side with the skin on for 10-15 minutes and same on the other side. Please don't keep flipping too many times, this might make the chicken harder. In order to get the red color, you ahve to add natural red food color.
