Indian Vegan Moong(mung) dal saag(Green lentils in indian sauce)
1/2 cup moong dal(soaked overnite and drained next morning, keep it for a day to sprout)
1 large tomato
1 medium sized onion(diced)
1/2 tsp cumin powder
1 tsp red chilli powder
1 tsp garam masala(ground cinnamon,black cardamom,ground cloves,ground pepper)
1/4 tsp turmeric powder
1/4 tsp kolhapuri(ghati) masala(from Maharashtra)
1 1/2 tblsp vegetable oil
Few sprigs of cilantro for garnish
salt to taste
1/2 tsp lime juice squeezed
In a skillet, sautee onions with vegetable oil till light golden brown.
add tomato and then spices. Sautee for minutes, then add lentils. Let the lentils
cook covered till well done(25 minutes) and then garnish with cilantro and squeeze lime juice overlentils and serve hot with white rice or rotis or chappatis.
servings:- 4-5 people.
