Coconut semolina Cake(Nariyal rawa cake)


This is a delicious Goan recipe usually done during any special occasions or especially during christmas time. It is a delicious mouth watering desert. Can be served with a whipped cream or eaten as a snack with coffee or tea or can be served as a desert after meals.


Ingredients:

2 1/2 cups freshly/frozen grated or flaked coconut
1 full cup semolina(Rawa)
1/2 cup sugar
1/2 cup sweetened condensed milk
1/4 cup skimmed milk
1/2 cup clarified butter(Ghee)
3/4 cup egg subsitute
1 1/2 tsp baking powder
1 tsp vanilla essence
top with dry nuts and raisins (optional)

Mix the egg substitute with grated coconut and milk with the beater. Combine semolina, sugar,condensed milk, flour and baking powder and mix thoroughly to combine with above ingredients Beat the butter/ghee and add it to the above mixture. Continue mixing.Leave the batter for 5-6 hours or overnight. Before bakingremove the mixture from the refrigerator at room temperature.Add vanilla essence (or desired flavor) and mix.Transfer the batter in a greased baking tray and top with dry fruits as desired.Preheat oven to 325˚ F (165˚ C) and place the tray at the center. 8. Bake for 45 – 50 minutes or until a knife inserted in the center comes out clean.
