Spinach Tofu Mix(Palak tofu )

We all know how much greens are good for you.Especially spinach filled with lots of iron and other full of nutrients. Same as Tofu. As we all know that tofu is made from soybeans. They are full of proteins and good for you. Usually the traditional dish in North India would be Palak Paneer. Paneer is milk based. Paneer is milk blocks cut into 1 inch thickness to make spinach and paneer mix. But I have substituted tofu for paneer and have tweeked the recipe to make the meal more nutritious, healthy and satisfying for our souls.

Blanced spinach
Tofu has no taste. it is soft and squishy like sponge. But tofu can be tasty, if you cook it right! So here is the Palak Tofu recipe, from my kitchen to yours.

Preparation: Blanch the spinach. In a medium boiling pot, dunk the spinach and then immediately take it out and soak it in the ice cold water. This will help the spinach from cooking further and retain its dark green color. Set aside In a medium sized crock-pot,add vegetable oil. When heated. Add onions. Sautee them till they are dark brown and transclucent. Add tomatoes and sautee them for another 5 minutes. Add ginger garlic paste and all the spice powder. Then Puree all this mix along with blanched spinach in a blender to a fine paste.

Tofu: Cut the tofu into 1 inch piece. In a seperate sautee pan add 1/2 tblsp vegetable oil and sautee Tofu with little salt and pepper and fry them till they are crisp and lightly brown. Serve hot with white rice, chappati(indian wheat pancakes) or naan or roti You can add Sour cream, if you would like to make it more exotic. Add a tab of butter to the spinach and tofu mix or 1 tblsp heavy cream. Carousel Spice Rack, 16 bottle
