Dum Aloo Curry(Baby potatoes curry)

Dum means"pressure and "Aloo means "potatoes" in Hindi.
Aloo Dum
is an easy Indian food recipe prepared with baby potatoes that are simmered in a yogurt based sauce and spiced with garam masala. This is a specialty north Indian dish.

Ingredients:
 1/2 pound colored baby Potatoes(12- 15pieces)
 A pinch of Asfoetida
 1/2 tsp Turmeric Powder
 1 tsp Chilli powder
 1 Medium size onion thinly grated
 1 1/2 cups yogurt
 4-5 Bay Leaves
 1 tsp Ginger garlic paste
 4 Vegetable oil
  Salt to taste
  1 tblsp tomato paste
  1/4 cup milk
  1 tblsp garam masala powder which includes(2 Cardamoms,7-8 Black Peppers,1 tbsp Coriander Seeds,1/4 tsp Caraway Seeds and 4-5 Cloves, 1 Small piece of chinese Cinnamon ) powered

 
How to make Dum Aloo:

Steam the potatoes till they are tender.Keep the skin on the potatoes and prick them with a fork.
Take oil in a frying pan and heat it for about one minute. Fry the potatoes on a medium heat until their color changes from white to light brown. Keep it aside. 
In a medium sauce pan on a medium heat add 4 tbslp vegetable oil, add grated onion, asafoetida, bay leaves and ginger-garlic paste to the remaining oil. 
Fry the mixture till the paste turns golden brown. 
Add the garam masala  and heat for about 2 to 3 minutes. 
Add turmeric, chilli powder and salt.
Add tomato paste.
Stir again for about a minute. 
Add milk along with the Low fat yogurt.
Keep stirring continuously, add water if the gravy appears too thick. 
Now add pricked potatoes to this gravy.
Cook for 5-8 minutes 
Garnish it with fresh coriander leaves. 
Dum Aloo is ready to serve.
