Sweet and Sour Mango Curry with fish jerky

This is my mom's favorite recipe, during summer times. If you are craving for something, then this is the perfect dish for you to bring taste to your palate back. I know it seems lot of ingredients and time consuming. But it's worth the time and efforts. It is a delicious recipe and unique. If you are not used to this kind of food then it might take a while to suit your taste bud. But eventually you will fall in love with this recipe.

Ingredients:

2 semi ripe mangoes(sliced lengthwise)
1/4 freshly grated coconut/frozen/dry grated
1/4 tblsp corriander seeds
1/4 tblsp cumin seeds(jeera)
1/2 tsp mustard seeds(rai)
1/4 tsp caraway seeds(ajwain)
3-4 fenugreek seeds
1/4 tsp turmeric powder
5-6 dried red chillies
1/4 piece of tamarind ball
1/2 piece of Onion thinly sliced
1/4 tblsp olive oil
5-6 dried fish(fish jerky)
2-3 green chillies slit

Preparation: In a iron griddle, roast all the above spices
except the mangoes, tamarind and fish. Roast till they are light golden brown. Grind all the above spices in a grinder or mixture to a fine paste. Retain the spice water after grinding the spice.

In a medium sized pan, add the spice mixture with the grinded spice water. Then
add the mangoes. Let it cook for 8 minutes. Then add fish jerky(found in any asian market).
let it cook for 3 minuts. then add the alit green chillies.
Can be served with hot white rice or have by itself as a soup. Very tasty!! Got to  try it.
