Herbed Lentil Pancakes! Yummy and delicioso



Lentil Pancakes

1 cup rice
2 cup water
3/4 cup white lentils(urad dal)
Few springs of Cilantro(corrianderleaves)
Few sprigs of Mint(pudina)garnish
Few sprigs of Basil(Tulsi)garnish
1 large onion thinly cut or diced for garnish
2 tbslp freshly grated sweet coconut(dry)garnish
Yeast for fermentation(1 tblsp in 2 tblsp warm water)vegetable oil or butter to pat the lentil pancakes
salt to taste
1 tsp sugar

Ingredients:

Soak rice in 2 cup water overnight. In the morning before grinding the rice, soak ural dal(lentils)in 1/2 cup warm water for an hours. Drain the water and keep aside. Grind rice and ural dal to fine paste.Whiel grinding use thereserved water of ural dal to grind. Use enough water to grind to smooth paste and not make it too watery.Pour the mixture in an alluminium vessel and ferment it for 12 hours on its own.

Note: If you want to ferment within few hours then add yeast to the mixture. The mixture will rise within 11/2 hr to 2 depending upon the elevation

Preparation: Add grated coconut before preparing the pancakes. Need Iron griddle to make lentil pancakes.Spray the griddle with non-stick spam. Take a medium sized laddle to pour the batter from the pan to the griddle. AddSprinkle onion, and herbs on the mixture. After 5 minutes turn upside down the pancake to cook on the other side. Don't burn, but it should be light brown in color. Pat the pancake with vegetable oil or ghee(butter)on both sides
Servings :Makes 10-12 small medium sized pancakes
Can be served with Green coconut chutney
